Summer Entertaining Cheese Board, with Grilled Veggies and Balsamic Bruschetta

Enjoy summer nights with this beautiful cheese board, celebrating the wonderful flavors of in-season produce.

Ingredients:


1 Whole grain baguette, thinly sliced + 1 clove of garlic, peeled

2 Varieties of cheese, any kind that you like (I used fresh mozzarella and a wine soaked cheese)

1 Bowl of cherries, rinsed


Grilled Veggies:

1 Green zucchini, washed and sliced 1/4" thick, lengthwise

1 Yellow summer squash, washed and sliced 1/4" thick, lengthwise

Olive oil

Salt and pepper to taste


Balsamic Bruschetta:

8 oz. Cherry tomatoes, washed and quartered

1 Small garlic glove, peeled and minced

1 Tbsp. Shallot, peeled and finely diced

1 tsp. Balsamic vinegar

1/4 tsp. Olive oil

1 tbsp. Fresh basil, rinsed and chopped

Salt and pepper to Taste


Method:


Marinate Tomatoes:

Combine cherry tomatoes and the last 6 ingredients together. Place in the refrigerator until ready to serve.


Grill Vegetables:

Preheat grill. Brush zucchini with olive oil, basting oil, or spray with nonstick cooking spray. Salt and pepper to taste. Grill over medium heat 3-4 minutes per side.


Grill Bread:

As the zucchini is cooking, place bread on the grill, and toast until grill marks form. About 3-4 minutes per side. As soon as you remove the bread from the grill, rub the bread with the garlic clove.


Assemble serving platter with all of the above, and enjoy!
