Three Bean Salad

Great for a picnic or potluck. This tasty three bean salad is a simple recipe that can be made in advance and makes enough to feed a crowd, or to have in your fridge and be used for meals/snacks to have throughout the week.

Three Bean Salad
Ingredients
1 15 oz can Kidney beans, drained and rinsed
1 15 oz can Cannellini beans, drained and rinsed
1 15 oz can Garbanzo beans, drained and rinsed
1 c. Celery, rinsed and diced(about 2 stalks celery)
¾ c. Shallot or red onion, peeled and diced
1 c. Parsley, fresh, rinsed and chopped
1 tsp. Rosemary, fresh, rinsed and chopped
1-3 tbsp. Apple cider vinegar
1-3 tbsp. Olive oil
Salt and pepper to taste
Sweetener to taste(optional)
Method:
Place the beans, celery, shallot, parsley and rosemary in a bowl. Season with salt and pepper. Stir to combine. Drizzle a tablespoon of apple cider vinegar and oil over the beans and toss gently to coat. Taste and adjust seasoning, amount of oil, and vinegar, to your liking. If you prefer a little sweetness, try adding a ½ tsp of sweetener(honey, sugar, etc.), mix and adjust sweetness/seasoning to your liking.
Cover and place in the refrigerator until ready to serve.
When ready to serve, taste again, and adjust the amount of seasoning or dressing, to your liking.
