Very Veggie Pasta Salad

Great for a picnic or potluck. This simple and tasty pasta salad uses whole grains, colorful vegetables, and a bottled salad dressing for a quick pasta salad recipe that is easy to make.

Very Veggie Pasta Salad

Ingredients:


8 oz whole grain pasta, uncooked, rotini is what you see here

2 medium tomatoes, or 1c. grape/cherry tomatoes, halved or quartered

1c. green bell pepper, chopped

1 small red onion, peeled and chopped

1 small English cucumber or 2 mini cucumbers, rinsed and sliced in quarters

1 c. broccoli flowerets, rinsed and chopped into bite size pieces

1 c. mushrooms, rinsed and sliced in quarters

1 2.25 oz can olives, sliced, drained

1 bottle Italian dressing


Method:


Cook the pasta according to package directions; drain.

While the pasta is cooking, chop the veggies and place in a bowl. Add the sliced olives. 

Add the cooked pasta to the bowl of chopped veggies and olives. 

Add the dressing(I start with about a quarter of the bottle, mix, and add more, if needed, to get the desired taste and consistency I am looking for). 


Cover and place in the refrigerator until ready to serve.


When ready to serve, taste again, and adjust the amount of seasoning or dressing, to your liking. 


Recipe Variations:


  • Switch up the type or shape of pasta that you use. 

  • Swap out the pasta for a different grain, or even tortellini, for a different spin. 

  • Use whatever veggies you like or have on hand, or think might make for a tasty combination.

  • Leftover roasted or grilled veggies could also all taste great!

  • Use whatever type of dressing that you like, or that might complement your vegetable mix-ins.
