Strawberry Flight

Serves 2





Ingredients:


4 Strawberries, washed and dried


Macerated Strawberries:


  • 1 c. Strawberries, washed and quartered

  • 1 Tbsp. Aged Balsamic Vinegar

  • Pepper to taste


Ricotta Cheese:


  • ¼c. Part Skim Ricotta Cheese

  • Cheesecloth


Dark Chocolate Covered Strawberries:


  • 2-4 Strawberries, washed and dried

  • ¼ c. 70% Cacao Dark Chocolate Chips


How to prepare:


Macerated strawberries:

Combine the strawberries, balsamic vinegar and pepper in a nonreactive bowl, or container. Place in refrigerator until ready to serve.


Ricotta Cheese:

Using a cheesecloth strain the ricotta over a bowl, pressing out excess moisture. Place in refrigerator until ready to use.


Dark Chocolate Covered Strawberries:

Place the chocolate chips in a microwave safe bowl. Melt the chips in 30 second intervals at 50% power, stir between each interval, until completely melted through.


Once melted, dip strawberries into the chocolate, one at a time. Allow any excess chocolate to drip off. Place on parchment lined plate or baking tray, and place into refrigerator to set. You will have leftover chocolate. Feel free to continue to dip extra strawberries, and save for 1-2 days in your refrigerator, for a treat at another time.


To assemble:

  1. Place 2-4 whole strawberries on the left side of the plate

  2. Spoon the strained ricotta onto the center of the plate.

  3. Place the macerated strawberries around the ricotta, and a little on top.

  4. On the right side of the plate, lay 2-4 dark chocolate strawberries.
