Two Bean and Tomato Salad

An easy and colorful salad, to add to your favorite table spread!


Two bean and tomato salad

Serves 4


Ingredients:


7 oz. Mixed greens (I used a combination of romaine, arugula and spinach),washed and drained

¼-1/2 c. Cannellini beans, rinsed and drained (if using canned beans)

1 c. Tri-colored snacking tomatoes, cut in half or quarters

4-6 oz. Green beans, steamed to crisp tender(see below)

Sliced red onion to taste


Method:


Steam green beans 5-6 minutes, until crisp tender. Place in a colander and run under cool water. Allow to drain completely.


Place the greens in a bowl, and top with remaining ingredients. Adjust the ratio of toppings to your taste.


Dressing:

Feel free to pick one that you enjoy, or make your own. You can't go wrong with any kind!
