Tomato Salad

Serves 4


The tomatoes, in this tomato salad recipe, create their own juice in the bottom of the bowl. So be sure to have some nice crusty bread on hand, to sop it up. As my mom would say, "It's liquid gold".



Ingredients:


4-5 Tomatoes, rinsed, and cut in 3/4"-1" pieces

3/4 c. Cucumber, rinsed, sliced and quartered

1/4 c. - 1/2 c. Green pepper, rinsed, and diced

1 Celery stalk, rinsed and diced

2 Garlic cloves, minced

2 Parsley sprigs, chopped

2 Basil leaves, chopped

Olive oil, a few drops

Water, a few drops

Salt and pepper to taste


Method:


Add the first 7 ingredients to a bowl. Add a few drops of oil, a few drops of water and salt and pepper to taste. Stir to combine. Refrigerate until serving time.
