An easy fruit salsa recipe that can easily be transformed to the fruit you have on hand, or that is available throughout the season.
Ingredients:
2 Peaches or nectarines, rinced, pitted, and diced
1/2 c. Red onion, peeled and diced
½ c. Red bell pepper, rinsed and diced(optional)
1/2 of a wholeJalapeño pepper, rinsed and diced, seeds and membranes removed
1 Tbsp. Lime juice, with a few grates of lime zest if if using a fresh lime
1-2 Tbsp. Fresh parsley, basil, mint, or cilantro chopped
Salt and pepper to taste
Honey or sweetener, if need, to taste
Method:
Mix all the ingredients together in a bowl.Taste for seasoning and adjust as needed. Let marinate in the refrigerator for at least a half an hour. Taste before serving, and adjust the seasoning if needed again.
Serving suggestion:
Serve over meat, seafood, or tofu, as a dip with tortilla chips, or as topping for tacos, or, goat cheese or cream cheese on a cracker or baguette.
