An easy fruit salsa recipe that can easily be transformed to the fruit you have on hand, or that is available throughout the season.

Ingredients:
1 c. Sweet cherries, rinsed, pitted and chopped
¼ c. Red onion, peeled and diced
¼ of a whole Jalapeño pepper, rinsed and diced, seeds and membranes removed
1-2 tsp. Lime juice, with a few grates of lime zest if if using a fresh lime
1-2 tsp. Fresh parsley, mint, or cilantro chopped
Salt and pepper to taste
Method:
Mix all the ingredients together in a bowl.Taste for seasoning and adjust as needed. Let marinate in the refrigerator for at least a half an hour. Taste before serving, and adjust the seasoning if needed again.
Serving suggestions:
Try serving over grilled meat, seafood, or tofu, as a dip for tortilla or pita chips, or as a topping over goat or cream cheese too.
