Apple Tuna Salad

Serves 2-3


Ingredients:


1 6 oz. Can or pouch light tuna in water, drained

¼ c. Celery, rinsed, and diced

⅛ c.-¼ c. Shallots or red onion, diced

¼-½ c. Granny smith or other tart apple, rinsed and diced

2 Tbsp. Walnuts, chopped

1 Tbsp. Dried cranberries(optional)

2 Tbsp. Light mayo, or any mayo of your choice

2 tsp. Dijon mustard

Pepper to taste


Method:


Place the first four ingredients into a bowl. Break up tuna and stir to combine. Add pepper to taste. Fold in walnuts and dried cranberries(if using). Add mayo and mustard and stir again to combine. Taste and adjust seasoning or ingredient amounts to your liking.


Serve on bread or toast, english muffin or bagel, in a wrap or pita, alongside pita chips, over a bed of lettuce, stuffed in an avocado, or however else you feel you may enjoy!
