Sheet Pan Tilapia with Green Beans and Roasted Potatoes

Serves 4


Ingredients:


4, 5- 6 oz, each, Tilapia fillets

1 lb. Potatoes, cut into ¾ inch cubes

1 lb. Green beans

1 Tbsp. Garlic and herb infused oil

Salt and pepper to taste

1 Lemon (optional), sliced


Method:


Preheat the oven to 425 degrees.


Spray a large baking sheet with non-stick cooking spray.


On ⅓ of the pan, lay potatoes, drizzle with some of the oil and season with salt and pepper to taste. Place in the oven and roast for 10 minutes.


Meanwhile wash green beans, and prepare the fish:


Spray the fish with non-stick cooking spray, or drizzle filets with a tsp of oil. Season the fish with your favorite seasoning, or a combination of salt, pepper, garlic powder, onion powder, oregano and red chili flakes, like I did here.


After the potatoes have roasted for 10 minutes, take out the sheet pan from the oven, and lay the green beans next to the potatoes and then the fish(if using lemon, place a few slices under each fish filet).Drizzle the green beans with the garlic and herb infused oil, and season with salt and pepper to taste.


Place the baking sheet back in the oven, and roast 10-12 minutes more, or until fish is flaky, green beans are tender, and the potatoes are a nice and golden brown.
